Schools watching out for kids’ nutrition

By Bob Foix, Food Service Director, New Prague Area Schools

This has been a fascinating year in our food service operation with changes and new things coming up and more nutritional guidelines being handed down from the government.

We switched to whole grain breads in all the schools and our bread count has jumped a lot. I was concerned about the students and their white bread but the whole grain has far surpassed these concerns. When you go through up to 100 loaves of bread in one day it tells you they like it.

We offer fresh fruit daily along with a canned fruit and our fruit consumption has jumped because they are given a choice. It is great to see.

We offer a soup and sandwich line daily at the senior high as another regular meal option. We are offering it a couple of days a week at the middle school as another meal option as well. And our soups are made from scratch. The students really seem to like that it’s made fresh and not out of a can.

Some of our a la carte items are low fat and we will be changing over to more low fat, healthier options. We use Tran’s fat free oil for our fries. Our chips are baked instead of fried. We use a Kaiser roll for our sub sandwiches instead of a sub bun and the counts have really jumped.

I feel it is the little details and simple changes in our food service that make a world of difference for your students.

As we begin the new calendar year at New Prague Area Schools, you can feel confident that we are doing everything we can to ensure that your children have as many healthy choices as possible when they walk through the lunchroom.
